Shanklesh is an artisan cheese. First fresh yogurt is made from scratch, the yogurt is then completely drained and fresh Ackawi cheese is added to slightly harden the yogurt. It is then hand rolled in thyme, red peppers and salt into two inch pieces. The pieces are then fan dried for up to a week. The longer its dried, the more intense the flavors become. Shanklesh is generally prepared with finely diced tomatoes, onions and extra virgin olive oil on top and is eaten with pita bread.
