These immensely popular Moroccan olives are left to ripen on the trees until mother nature decides they are ready to be harvested. A generations old method of dry curing using sea salt and wooden crocks is then used to enhance the flavor even further. The wrinkled skin and wonderful texture of these perfectly salted olives goes great on bread, pizza, salads, entrees and just about anywhere else you can think of.
These olives can be bought from many places, but we take the extra steps to rehydrate them overnight, wash them and then marinate them in olive oil. This gives them that “back home” flavor that you are sure to enjoy.
